  • Carpano — Carpano Antica Formula — rich, vanilla-heavy, the heavyweight choice. Stands up to bold spirits. Used in: Boulevardier
  • Carpano Antica — The premium Italian sweet vermouth — vanilla, dried fruit, dark chocolate notes. Use when the cocktail can carry the weight. Used in: Double Rye Manhattan, El Rey Manhattan
  • Cinzano 1757 Vermouth Rosso — Restored 1757 recipe — botanically complex, herbal, more aromatic than standard Cinzano. Used in: Bitter Giuseppe
  • Cocchi Vermouth di Torino — Classic Torino-style — rosa, cocoa, subtle bitter finish. Lighter than Carpano Antica. Used in: The Lucille, Thou Shall Not Be Named
  • Dolin — Dolin Rouge — French chambéry style. Lighter, more delicate; doesn’t dominate cocktails. Used in: Bridgetown Negroni
  • Martini & Rossi Rosso — Approachable, slightly sweet entry-level vermouth. Works in a pinch. Used in: Little Italy
  • Barbadillo Atamán Vermut — Spanish sherry-based vermouth from the great Sanlúcar sherry house. Oxidative, nutty, drier than Italian sweet vermouths — adds savory depth in place of vanilla weight. Used in: Other Boulevardier
